The second single malt whisky release from Adelphi’s Ardnamurchan distillery in the Western Highlands. matured in 65% ex-bourbon and 35% ex-sherry casks, and bottled at a nice drinking strength of 46.8%, with an outrun of just under 15,000 bottles. Located upon the breathtaking Loch Sunart, Ardnamurchan distillery is a comparatively new powerhouse which opened for production in 2014. Champions for green manufacturing, the distillery and all of its by-products are environmentally friendly and entirely sustainable. Ardnamurchan uses malt from Broomhill Farm and boasts two whisky styles; one peated and one unpeated, using American and European oak and ex-sherry casks as well as American oak ex-bourbon casks. After the First World War, two veterans of the famous Black Watch regiment set up a whisky blending company. The success of their primary blend, Red Hackle, led to a large following in the US, as well as on home turf on the west coast of Scotland. The company built a close relationship with the founders’ former regiment and the services in general. In 1920 two ex-servicemen, Charles Hepburn and Herbert Ross, founded a whisky blending company in Glasgow that, in the early days at least, boasted its exclusive employment of former members of the military. To reinforce its relationship with the service, its number one blend was known as Red Hackle, named after the ‘hackle’ – or feather – worn in the cap of the Black Watch regiment, which both Hepburn and Ross served in during the First World War. In 1959, two years after the death of partner Herbert Ross, Charles Hepburn sold the company and its brands to distiller and blender Robertson & Baxter (now Edrington). He is reported to have said at the time that after the death of his wife he ‘realised that you do nothing for yourself, only for someone else. William’s rise from cattle herder to whisky baron is one of the great tales in Scotch. In 1903, William employed his son-in-law Charles Gordon and six years later he embarked on a world tour spreading the word about Grant’s (or, as it was then called, Grant’s Standfast after the clan motto: ‘Standfast Craigellachie’) and making the brand into the worldwide success it is today.  | Old Fettercairn 10 Year Old Circa 1990’s | 2028!
Fettercairn has a very traditional style set-up with an open-topped mash tun, wooden washbacks and small stills. There are even soap grinders on the sides of the wash stills. These would have been used to add non-perfumed soap as a surfactant to stop the stills boiling over. This all points to a firm, quite heavy, nutty style of spirit. This was accentuated between 1995 and 2009, when the condensers were made of stainless steel. This also added a slightly burnt, pot ale character to the new make. However, a unique cooling ring attached to the top of the swan neck, which sprays cold water down the sides of the still, aids reflux and helps the spirit lean toward a lighter style. Inspired by Edinburgh’s rich brewing and distilling heritage, the inaugural release brings sweet and spice together, while surprisingly smooth for a young whisky. Our future releases, each being unique, will evolve from this recipe by layering in heritage and speciality malts, alongside a range of yeasts not typically used within scotch whisky production. This spirit has been matured in Oloroso Butts, Pedro Ximénez Hogsheads, Bourbon Barrels and Rum Barriques; and is limited to 8,188 bottles. We have selected this whisky as our first release to reflect the first stage of all Holyrood recipe development, whilst also showcasing the incredible and complex flavours which can be achieved by Holyrood at any age. One of the oldest licensed distilleries in Scotland, Fettercairn was opened in 1825 and after having many owners (including Sir John Gladstone, father of 4-time British Prime Minister William Gladstone) it is at the heart of many of the Whyte & Mackay range. The malt produced is predominantly used in blends but they also produce their own range of single malts.
Our inaugural release uses traditional Scotch pot still malt and distilling yeast, the raw materials which form the flavour foundation of all Holyrood single malt whisky recipes.
