Accounts of the distillery’s genesis vary, and the truth is probably lost to the mists of time, but it is thought that a local farmer named David Robertson founded what we now know as Highland Park distillery in 1798, on the site of an illicit still operated by nefarious smuggler (and former priest) Magnus Eunson. Since its introduction as a single malt in the late 1970s, the distillery has been awarded many plaudits, not least of which came from the late, great whisky writer Michael Jackson, who called it “the greatest all rounder in the world of whisky”. It’s characteristic style coming from the use of Sherry casks, along with an often cited heathery sweetness imparted to the spirit by way of the distinct Orcadian peat used during the malting process. Having been in specialist and craft Scotch Whisky production for generations, Douglas Laing originally exported blends, but now carries the family name down the line by focusing on bottling exceptional single malts and grains as part of their Old Particular, Provenance and XOP ranges. They also enjoy huge success with their “Remarkable Regional Malts” range; a series of creatively named vatted malts, designed to epitomise the characteristics of Scotland’s whisky regions.  | The Wolfburn Lest We Forget 100 Years Of The Poppy | 1937! The Wolfburn distillery teamed up with Carnegie Whisky Cellars to create this limited edition bottling, commemorating the 100th anniversary of the First World War's end.
The purchase of the land was finalised in May 2012 and the first ground was broken on the new site just a few months later. The new Wolfburn distillery building is just a short walk along the burn from the old site towards the sea. The Flow Country covers much of Caithness and has done so since the end of the last ice age. It is an ancient and almost unique environment, the largest expanse of blanket peat bog in Europe, perhaps the entire world. Today Wolfburn’s distillers fashion their whisky the same way it was always made, by hand, using only the finest ingredients, and without haste. In 1994 the Prince of Wales awarded it the Royal Warrant, an accolade attested to no other whisky on earth. Rumour has it that it was the Prince’s most favoured whisky. Having said that, Laphroaig is often perceived as quite an acquired taste amongst the faint of heart, perhaps due to its intense peaty, smoky and rich flavours. During the prohibition, an American Surgeon General was adamant that it was unfit for recreational consumption, and instead declared it to be strictly utilised for medical purposes only. Today, it is the biggest selling single malt from Islay, and one of the last distilleries using its own floor maltings. One of the new wave of Scottish farm distilleries designed by the late Jim Swan, Ncn’ean has been designed as the first fully organic modern distillery in Scotland powered by 100% renewable energy. Wood chips for the biomass boiler are sourced from a local forest, while all by-products are recycled as animal and plant feed on the remote estate on which it lies. With the first whisky released in 2020, the aim was to produce a fruity spirit. Using organic Scottish barley and bottling the whisky in the UK’s first 100% recycled clear glass bottle. In their other series - the Limited Range - the like to produce unique releases with a bit of a twist such as “Circus”; a vatting of two blended malts, a blended grain and Benrinnes. Compass Box was founded by John Glaser and the company is known for its shenanigans and highly experimental whisky projects. A stalwart of the Compass Box range, the name Peat Monster conjures images of Islay, with Laphroaig and Caol Ila contributing a hefty chunk of this blend.  | Aberlour 12 Year Old Double Cask Matured | 1961!
Despite being unlucky enough to suffer two catastrophic fires (in 1879 and 1898), Aberlour has enjoyed stable production throughout most of its life, and under the current regime its popularity has exploded. This is especially true in France where it has overtaken Glenfiddich as the biggest selling single malt. This roaring success could be attributed to the delicate berry-flavour spirit that runs from its swan-necked stills, or to the enormous popularity of its heavily sherried A’bunadh batch releases. Perhaps even the fact that the Distillery Manager used to serenade the slumbering casks with the soothing tones of the bagpipes. Okay, maybe not the last thing! It consists of one road, one pub, one distillery and one shop and is often described as remote. In fact, while writing the classic “1984”, George Orwell described the island as “The most un-getable place”. Originally built in 1810 the distillery fell into disrepair and wasn’t revived until the 1960’s by two local estate owners. It is now under the ownership of Philippines based “Emperador INC”. A fragrant and light dram, Isle of Jura 16 Year Old won Bronze in 2004 at the International Wine and Spirits competition. This outstanding light expression from the only distillery on the Isle of Jura has a nice oily palate with hints of tobacco and nuts, violets and even some chocolate notes. A very nice all-rounder. The original distillery had two stills and was largely demolished and rebuilt next door in the 1970s. It’s weathered over 100 years of production in its various guises. Predominantly used for blends, there are only a handful of single malt releases, including this one. To accompany the final series of the epic HBO drama, Diageo helped ease the tension by releasing a range of eight bottlings - one for each season of the show - from eight different distilleries across the Scottish regions each representing a Game of Thrones House and adorned with the respective crest; supposedly with some connection between the dynasty and the distillery. Highland Park remains the most northerly whisky distillery in Scotland, although not by much, as it is little more than a stone’s throw from fellow Orcadian, Scapa.
It's time to meet the beast – the Timorous Beastie, that is! Douglas Laing has created a limited edition bottling of it's Highland blended malt expression, featuring whiskies matured for at least 13 years before bottling.

Located off the West Coast of Scotland is the Isle of Jura. Where the red deer population outnumbers the human population by 5000 to 200. The island lies only 60 miles from Glasgow, (as the crow flies), yet can take rather along time to reach.
Created in 1896 by Mathew Gloag, it was initially called the Grouse Blend but the ‘Famous’ prefix was added in 1905 after the success of the brand.
Glendullan was the last of the seven original distilleries to be built in Dufftown (the total is now nine, although there are a number of silent distilleries in that number).
