Mackillop’s Choice independent whisky bottler was founded in 1996 by Angus Dundee Distillers (owner of the Glencadam and Tomintoul distilleries).It is named after Lorne Mackillop. Lorne Mackillop is the heir to the chief of the Mackillop Clan, which was all but wiped out by the English in the aftermath of the Battle of Culloden in 1745 during the Jacobite Rebellion.

Accounts of the distillery’s genesis vary, and the truth is probably lost to the mists of time, but it is thought that a local farmer named David Robertson founded what we now know as Highland Park distillery in 1798, on the site of an illicit still operated by nefarious smuggler (and former priest) Magnus Eunson. Since its introduction as a single malt in the late 1970’s, the distillery has been awarded many plaudits, not least of which came from the late, great whisky writer Michael Jackson, who called it “the greatest all rounder in the world of whisky”. It’s characteristic style coming from the use of Sherry casks, along with an often cited heathery sweetness imparted to the spirit by way of the distinct Orcadian peat used during the malting process. Stability was only achieved relatively recently, when the ailing distillery was purchased in 1997 by industry giants, Glenmorangie. The subsequent years have seen the distillery’s popularity swell, with fans enticed by the signature style of tarry, sooty smoke, balanced against citric sweetness and an oily mouthfeel. While Ardbeg still retains its distinctive personality, it has definitely been influenced by Glenmorangie’s propensity for experimenting with cask finishing, and (dare we say it) NAS expressions. A new £140 million subterranean distillery and visitor centre on the Easter Elchies estate was opened to the public in the summer of 2018 and has since won several awards for its architectural quality; with its exciting features including glass walls of vintage whiskies, a circular pod of copper pot stills, and a Boutique reflecting those in Dubai and Heathrow airports. Macallan really love a collaboration, or two. This time they’ve teamed up with artist Erica Dorn, who’s work will be familiar to fans of Wes Anderson’s films. Together they have created a whisky, and packaging, that celebrates Hogmanay, Scotland’s famous New Year celebrations. The packaging design takes inspiration from fire rituals associated with the celebration, as well as the Scottish concept of “first footing”: being the first to visit a friend or neighbour after “the bells”, preferably carrying a bottle of whisky and some shortbread.

It consists of one road, one pub, one distillery and one shop and is often described as remote. Isle of Arran Distillers opened their first distillery in 1995, and it quickly became a firm favourite. They bottled its first single malt in 1998, a limited edition 3 year old in a glass decanter. The distillery also produced a peated single malt called Machrie Moor, however an experimental second distillery on the other side of the island, called Lagg, is now the site of all the company’s peated production. As of 2019, the distillery was renamed Lochranza, however its single malt brand is still known by the old name, Arran. This memorable mix of 10 sherry hogsheads and 35 bourbon barrels were distilled and filled on the 31st December 1999 and 1st January 2000. The Macallan distillery was founded in 1824 by Alexander Reid, a barley farmer and school teacher. Now owned by the Edrington Group, The Macallan prides itself on its Six Pillars, which include its curiously small stills, very narrow ‘cut’ of new make spirit and exceptional cask management. It is the most sought after whisky for collectors, regularly setting records at auctions all round the world.
The whisky itself has been centred around this concept too, with a buttery, biscuit finish evocative of the iconic Scottish confection.
